Lingon Squares

This is a good one today, guys! If you haven’t started your fika tradition, then you will want to with this recipe. These jam bars have a soft and slightly sweet bottom layer, covered with jam, and then finished off with a sweet a slightly crunchy top layer. Not only are these amazing to eat, they are really very simple to make and only use a few ingredients that you should already have in your cupboard.

Let’s get started::::

RECIPE

Oven Temp: 400 F, 20 min

Bottom Layer:
2 c flour
3/4 c sugar
1 tbsp baking powder
2 sticks and 2 tbsp butter
1 egg
1 tsp vanilla

Middle Layer:
2 dl lingon jam ***feel free to substitute another kind of jam, but you can find lingon jam by clicking this link

Top layer:
3/4 c Quick oats
1/2 c sugar
1 tsp vanilla flavoring
2 tbsp butter

Blend the flour, sugar, and baking powder in a bowl. Add the butter.
Add egg and blend together. (considency should be that of cookie dough, dense)

Press out the dough onto a greased baking dish, about 9″ X 13″.

Spread out the jam in an even layer over the dough.

Blend the oats, sugar, and vanilla. Melt the butter and pour over the mixture. Mix well. Spread the mixture over the layer of jam.

Bake in the oven about 20 minutes.

Let cool and then cut into squares and serve.
